We have had a lot of talk about the holidays and the wonderful treats they bring, but we haven’t spent a lot of time talking about some healthy snack alternatives.
When I get the motivation to make something healthy, I usually have a couple of go-tos. Sometimes I’ll do the diet thing and cut up some fruits and make a little yogurt parfait bar, but that can end up being a lot of sugar, even if it is natural sugars. But, what I really like to do is make what I call protein bombs. These little snacks are low in sugar and higher in the protein department.
You’ll need:
– 1 cup Peanut butter
-Local honey if you can get your hands on it, if not, any honey will do (my uncle is a bee farmer, so we have an in!)
-1 tbsp of unsweetened cocoa to taste; there’s no sugar, add as much as you want!
-1/2 cup fast/instant oats
-1/4-1/2 cup Sliced/diced almonds
-1/4 cup unsweetened coconut flakes
Combine all ingredients in a medium sized mixing bowl, separate into ping-pong sized balls and refrigerate. This makes about 12-15 balls depending on your measuring skills.
For substitutions, almond butter can be pricey, but just as delicious. It’s not as sticky, but the honey can help with that. Additionally, if you like a bit of a crunch, you can swap out the oats with granola. Adding in granola with dried berries will give it a little more sweetness. If you’re not an almond person, throw in some chia or flax seeds. You can’t really taste them, but both have great health benefits.
